The Clover Club pre-dates Prohibition and takes its name from the Philadelphia men's club with which it shares a name. It was something of an old boys club, established by lawyers and bankers in the Bellevue-Stratford Hotel in the 1880s but, Catford Gin gives this classic the modern update it deserves!

- 40ml Catford Gin
- 15ml Lemon Juice
- 15ml Raspberry Syrup
- 15ml Martini Extra Dry Vermouth
- 15g Egg Whites
1. Place all ingredients in a cocktail shaker. Shake for 15 seconds without ice.
2. Add ice to the cocktail shaker and shake again for 30 seconds.
3. Strain into a glass and garnish. Voila!
